Quick and Healthy Leftover Rotisserie Chicken Stew: A One-Pot Wonder

Weeknight dinners don’t have to be complicated or time-consuming to be delicious and nutritious. If you have leftover rotisserie chicken sitting in your fridge, you’re in for a treat! This Leftover Rotisserie Chicken Stew is quick, healthy, and full of rich, comforting flavors, perfect for a cozy family meal that’s ready in under 45 minutes.

With tender chunks of rotisserie chicken, hearty vegetables, and a secret ingredient that makes all the difference—white kidney beans—this stew brings you the perfect balance of comfort and nourishment. The beans naturally thicken the broth, giving the stew a silky texture without the need for heavy cream, making it a lighter, healthier option than traditional creamy stews.

What’s the secret to this stew’s depth of flavor? Light soy sauce! It adds a savory richness to the dish without overpowering the other ingredients, enhancing the overall experience. Plus, the inclusion of canned fire-roasted tomatoes introduces a subtle smokiness that elevates the entire dish.

Not only is this stew a perfect way to use up leftover chicken, but it’s also packed with plant-based protein, fiber, and vegetables, making it a wholesome, satisfying meal. Serve it with a warm, buttered baguette for the ultimate comfort food experience!

Ingredients:

  • 2 tbsp. olive oil
  • 1 small onion, diced
  • 1 large carrot, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • ¼ cup (30g) all-purpose flour
  • 6 cups (1.5L) chicken broth
  • 1 (540ml) can white kidney beans, rinsed and drained
  • 3 tsp. chicken bouillon powder
  • 1 tsp. dried thyme
  • 1 tsp. dried oregano
  • 1 tsp. dried parsley
  • ½ tsp. dried basil
  • ½ tsp. smoky paprika
  • 2 bay leaves
  • 1 large yellow potato, peeled and cubed
  • 2 to 3 cups rotisserie chicken, diced
  • 1½ cups green beans, trimmed and chopped into 1-inch pieces
  • 1 cup frozen peas
  • 1 (398ml) can diced fire-roasted tomatoes with juices
  • 1 tbsp. light soy sauce
  • Salt & pepper, to taste
  • Fresh parsley, for garnish

Instructions:

  1. Sauté the Veggies: In a large pot, heat olive oil over medium heat. Add the onion, carrot, and celery, cooking for about 5 minutes until softened.
  2. Add Garlic and Flour: Stir in the minced garlic and cook until fragrant. Sprinkle the flour over the mixture, stirring constantly, and cook until the flour turns golden brown.
  3. Add the Broth and Beans: Slowly pour in the chicken broth, scraping the bottom of the pan to release any flavorful bits. Stir in the white kidney beans, chicken bouillon powder, thyme, oregano, parsley, basil, paprika, and bay leaves.
  4. Simmer with Potatoes: Add the diced potatoes and bring the stew to a boil. Reduce the heat and let it simmer for 15 minutes, or until the potatoes start to soften.
  5. Stir in Chicken and Veggies: Add the rotisserie chicken, green beans, peas, fire-roasted tomatoes with their juices, and light soy sauce. Let the stew simmer for another 5-10 minutes until heated through.
  6. Season and Serve: Taste the stew and adjust the seasoning with salt and pepper. Garnish with fresh parsley before serving. For the ultimate comfort food experience, serve with buttered baguette on the side.
